Page: 003\n_______________________________________________________________________________\n|_____________________________________________________________________________\/\n\n\n\n ______________________________\n\/ Kadgeon's Corner - by Kadgeon\\______________________________________________\n|_____________________________________________________________________________\\\n                   \nThanksgiving recipes for dinner and dessert!\n\nWith the holiday's coming up, and Thanksgiving just around the corner for some\nof us I thought I would share a few recipes with you all! \n \n                          Momma's Cornbread Dressing:\nIngredients :\n2 (16 ounce) packages dry corn bread mix \n1 onion, diced \n1 clove garlic, minced \n1 bunch celery, chopped \n6 hard-cooked eggs, chopped \n1 teaspoon rubbed sage \n2 (14 ounce) cans chicken broth \n2 cups turkey stock \nsalt and pepper to taste \n \nDirections :\n1.) Prepare cornbread according to directions on package. Cool and crumble.\nPreheat oven to 350 degrees F (175 degrees C). \n2.) In a large bowl, combine the crumbled corn bread, onion, garlic, celery\nand eggs. Gently stir. Sprinkle with salt, pepper and sage. \n3.) Add the chicken and turkey broth 1 cup at a time until the cornbread\nbecomes moist but not wet. \n4.) Place stuffing into a Dutch oven or loosely pack into a turkey. Page: 004\n_______________________________________________________________________________\n|_____________________________________________________________________________\/\n\n\n\n ______________________________\n\/ Kadgeon's Corner - by Kadgeon\\______________________________________________\n|_____________________________________________________________________________\\\n                   \n                       Cornbread Stuffing Southern Style\nIngredients :\n2 (8.5 ounce) packages dry corn muffin mix \n1 (8 ounce) can cream-style corn \n2 eggs, beaten \n1\/2 cup plain yogurt \n1\/4 cup milk \n1\/2 cup butter \n1 onion, finely chopped \n2 celery, finely chopped \n1 green bell pepper, finely chopped \n4 cloves garlic, minced \n2 teaspoons dried thyme \n1 teaspoon dried basil \n2 teaspoons dried oregano \n2 teaspoons salt, or to taste \n1 teaspoon ground black pepper \n1\/4 teaspoon cayenne pepper \n3 cups chicken broth \n \nDirections :\nPreheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch\nbaking dish. \nIn a medium bowl combine muffin mix, corn, eggs, yogurt and milk stir just until\nmoistened. When onions are tender stir in thyme, basil,\noregano, salt, pepper, cayenne and broth. Bring to a boil and then remove from\nheat. \nCrumble the cornbread and stir into broth mixture\nmix well. Add more broth or more bread, as necessary, to achieve desired\nconsistency. \n \nMaking Gravy :\nStep 1: Heat 4 cups of turkey broth, chicken broth or water--or a combination\nof broth and water--in a saucepan until hot but not boiling.\nStep 2: Transfer the cooked turkey from the roasting pan and set it on a\ncutting board to rest before carving. Remove as much grease or fat as possible\nfrom the pan using a spoon, ladle or gravy separator. Reserve  cup fat. \nStep 3: Place the roasting pan over two burners on the stove on medium heat.\nDeglaze the pan by adding  cup water or other liquid (wine, turkey or chicken\nstock). Stir constantly and scrape the bottom of the pan to loosen browned\nbits. Pour off the liqui\nStep 4: Add  cup reserved fat to roasting pan over medium heat. Whisk in  cup\nall-purpose flour. Cook gently, stirring constantly, until the flour loses its\nraw smell and the mixture becomes golden in color. Transfer to a warmed gravy boat\nor serving bowl and garnish with fresh chopped sage. Other herbs and spices\nmay suit your tastes as well\nexperiment with a pinch of cloves, a sprinkle of thyme and a touch of mace. \n \n                            Chocolate Chip Pie\nIngredients:\n1 (9-inch) unbaked deep dish pie shell* (4-cup volume)\n2 large eggs \n1\/2 cup all-purpose flour \n1\/2 cup granulated sugar \n1\/2 cup firmly packed brown sugar \n3\/4 cup (1 1\/2 sticks) butter, softened \n1 cup (6 ounces) NESTL TOLL HOUSE Semi-Sweet Chocolate Morsels \n1 cup chopped nuts \nDirections : Preheat oven to 325 F, Beat eggs in large mixer bowl on high\nspeed until foamy. Beat in flour, granulated sugar and brown sugar. Beat in\nbutter. Stir in morsels and nuts. Spoon into pie shell,Bake oven for 55 to 60\nminutes or until knife inserted halfway between edge and center comes out clean.\nYou can serve this pie warm, or cool it in the fridge for about 30 minutes to\nan hour. In large bowl beat together remaining ingredients\npour over the pecans. Bake in preheated 350 oven for 35 minutes or until knife\ninserted in center comes out clean.
